The Lineup
Our year-round four. Six more rotate on the board — seasonals, one-offs, and whatever the cellar crew talked us into on a Tuesday.
Floor-malted pils and Saaz, lagered eight weeks in the cold room. Cracker, lemon peel, a bitterness that quits when it should.
Simcoe and Centennial, dry-hopped twice. Grapefruit pith, pine resin, and a dry finish that keeps the second pint honest.
Munich malt and a whisper of local maple in the boil. Toffee, toasted crust, a warm finish for the first cold week of the year.
Flaked oats, chocolate malt, cold-steeped coffee from the roaster two doors down. Pours like motor oil, drinks like dessert.
The Brewhouse
Wildpine started in a leaky barn on Route 9 with a 3-barrel system and a well that ran soft enough for pilsner. We never moved. We just built around it.
Every recipe here starts with what comes out of the ground. Soft, low-mineral ridge water — the reason our pilsner tastes like it does and our IPA never turns harsh.
Base malt from a floor maltings ninety minutes north. Hops from three Champlain Valley farms. If we can't visit it in an afternoon, it doesn't go in the mash.
No shortcuts on the lager tank. Eight weeks at 34°F while the beer decides what it wants to be. It costs us tank space. It's the whole point.
Two-thirds of what we brew never leaves the building. The rest goes to fifty accounts inside a ninety-mile ring. Fresh beer is a logistics problem, and this is our answer.
The Taproom
Sixty seats, one wood stove, a dog-friendly patio, and a pizza oven that runs whenever Dana feels like lighting it. No reservations, no TVs, no bad seats.
Growlers and crowlers filled until 30 minutes before close. Last pour is fifteen minutes before we lock up — we mean it kindly.
Wet-hopped pale, brewed Tuesday, tapped at 5. It goes fast and it does not come back.
Saturdays, 11am. Forty minutes on the floor, four pours after. $15, twelve spots.
Whole hog, three sets, one long table. Free to get in, worth showing up early.
Hardware & Hearsay
The Cold Cellar is the best pilsner brewed east of Pilsen, and I'll say that in front of anyone holding a clipboard.
We've poured Ridge Line on our guest tap for six years. It's the only IPA my regulars order by name instead of by shelf.
I drove ninety minutes for a pig roast and stayed until they turned the lights on. Bring a coat, sit outside, order the stout.

We're the green barn at the top of Cutter Road, past the second cattle guard. If you hit the covered bridge, you've gone too far and we've all done it.
