We commit to the crop before it's drilled and take the whole press.
This is a finishing oil that can take heat — smoke point is around 230°C, higher than most olive oil, so it roasts and fries without turning bitter.
Raw, it's better than it has any right to be: over tomatoes with salt, through a warm lentil salad, or whisked with the honey and a little vinegar into a dressing.
Keep it out of the light. The sediment at the bottom is the point, not a fault — turn the bottle over once before you pour.
